I know this is sort of an interesting off-season so far, and not yet dull enough to interrupt it with OT threads, but I couldn't help myself.

 

Right now, my hands smell of fresh garlic, I have some Paddy's Irish Whisky in my glass, and I've just sliced up about a pound of cherry tomatoes, smashed some cloves of garlic, sprinkled on some kosher salt and a pinch or more of red pepper flakes, drizzled the lot of it with some extra-virgin olive oil and am letting the whole slathered bunch of it soak and marinate while I boil some pasta.  When the penne is finished cooking, I'll drain it and dump it in with the tomatoes and let the residual heat from the pasta "cook" the tomato mixture.  Then I'll add some fresh mozzarella and chopped Italian parsley and shred some Parmesan cheese on top and serve with some grilled chicken tenders.

 

Monday, I hammered down some chicken cutlets, lightly dredged in flour, dipped in whisked eggs and coated with seasoned bred crumbs, sauteed, and slathered with marinara, topped with provolone and parmesan cheeses and baked until the cheeses started to bubble.  And, for tomorrow, I've diced up some onions, bell pepper and celery, sliced some andouille sausage and cubed some chicken for my own recipe for gumbo that I've kind of created myself.  Honestly the best gumbo I've ever had.  And, as I'm doing all of this, I'm thinking to myself, man, the Petersons better be thankful and appreciative that ol' Norm can cook.  I suspect a lot of families don't eat this well.

Tonight?  Homemade doggy treats.  

 

Smash a ripe banana in bowl and mix in...

  •        2/3 cup old fashioned oats
  •       1 cup oat flour* 
  •       1 beaten egg
  •        3 tablespoons peanut butter

Roll into 24 smallish balls and press down.

Bake in 300 degree oven for 30 to 40 mn.**

 

*just process your oats in a food processor for a couple of mn and you have oat flour (who knew?)

**my old girl prefers them a bit moist so I only leave them in for 30 mn.  and I score them before I put them in so they break in half easily.

There is a place in Hampton that is suppose to have great food!

 

Lasagna will be cooking in the CH kitchen tonight.

 

I was just about to say, this thread makes me wonder what's on the menu at Conlee's?

Brown bomber chili-

 

1 can black beans

1 can light red kidney beans

2 cans chili beans

1 can dark red kidney beans

1 diced tomato

Large tomato sauce

1 small can tomato paste

Minced garlic

1/2 onion

1 green pepper

1 1/2 pound ground beef

Chili powder (I prefer mild), cumin, salt and pepper

 

Don't spend money on colon cleanse kits ladies and gentleman.  Here's the recipe for a week of success.

Had turkey chili last night. My wife is a very good cook, and I am a really excellent eater.

 

I can vouch for both!! And I was disappointed I didn't get any strawberry-rhubarb pie last weekend Silver

OK, so, I hate to brag (really, I don't) but the gumbo is simmering and I just tasted it for season and it is FINE, FINE STUFF.

 

It's really simple, guys.  It just takes some lovin' care and a long simmer, which gives you (me) plenty of time for some adult beverages.  Tonight's drink of choice is a little rum and ginger ale with a spritz of lime.  And I'm feelin' FINE.  Like my gumbo.

 

I almost just typed out my recipe.  If anyone reeeeallly wants it, PM me.

 

 

I also created a decent pork butt chili recipe that I season with chipotle peppers in adobo sauce.  But that's for another day.

 

(And now you know why Norm is a little on the heavy side.)

Last Saturday's dinner consisted of smoked St. Louis style ribs with a dry KC BBQ rub, smoked whole chicken with Bobby Flays 16 spice rub and a smoked moose roast with a dry prime rib rub. Complemented by corn pudding with diced poblano peppers. Gotta love smoked meat and corn! Makes me feel very cave-mannish!

About a month ago, we added a pork bacon burger to the menu.  It's a 1/3 pound patty consisting of ground pork mixed with bacon.  We add a brown sugar glaze, a fried egg, top it with bbq sauce and serve it on a toasted bun.  It's great with one of our homemade sides--macaroni salad, potato salad, baked beans or cole slaw.  It tastes better than a topless girl in a Lincoln park on a cold winter's night.....
